The project folder field will become active after you click OK and actually create the new project. Before that, the project, and thus the folder, does not actually exist yet.

After creating the project, just select it from the list, and the folder field will be active on the "Project Profile" pane.

If the "Project Profile" pane is missing, please click the thin vertical stripe just past the vertical scrollbar.
