Can invoices be edited after creation?

Yes, you can edit invoices after creating them.
Perhaps you will need to edit the client jobs that are part of the invoice.
In that case, first edit the invoice and remove the "Approved" checkmark, if one is present.
If the invoice itself is already linked to a payment, you will need to unlink it or delete the payment entirely before being allowed to edit the invoice.
