Threr is no dedicated variable for exchange rates.

But here are the variables we do have:
\INVOICE_TOTAL\
Invoice total in the client's currency

\INVOICE_TOTAL_BASE\
Invoice total in the base currency

You can use these to calculate the exchange rate like this:
\INVOICE_TOTAL_BASE/INVOICE_TOTAL\
