I am adding new jobs/invoices/projects, but sometimes this new information simply disappears.

Some data can be lost from view in TO3000/Projetex when data filters are turned on. Please, check whether the Local Custom Filter and/or Global Date Filter are turned on or not and also the status filters at the top of the pages. Turn them off and try creating a new job.
